A healthy patty packed FULL of nutrition!
These patties are a two-step process but so worth the effort.
They have an almost exotic tangy flavor that offsets the fishy taste you would normally get with using canned salmon.
Fried to a crisp, these patties are crunchy on the outside and delicious on the inside.
They are keto and low-carb-friendly and crazy healthy.
Cruciferous vegetables have an anti-cancer effect and help to fight inflammation.
Salmon is one of the most nutritious foods on the planet so these combined ingredients provide a powerhouse of vitamins, minerals, & antioxidants.
What I Did Wrong
I am constantly coming up with new recipes but this one was sort of an accident.😲
I had planned on having salmon patties with a side of cruciferous vegetable soup but things didn't go quite as planned.
I filled my soup pot with the vegetables, added the flavoring, and cooked until tender (like I always do).
However, the final result wouldn't have been to my husband's taste bud satisfaction.
My husband doesn't care for vegetables (he's a fast-food-y), so I have to add a lot of flavors (or bacon) to get him to eat healthily.
I'm trying to avoid bacon so I had to get creative.
I tasted my veggies and thought, "Houston, we have a problem!"
No matter what I added, I knew it didn't help the flavor enough to get him to eat the soup.
So, I made the salmon patties hoping he would at least eat those and I could open a can of green beans to go with them.
Make Adjustments When Cooking Keto
When you're cooking the keto way, it is necessary to change things up a bit due to having to use alternative ingredients.
Case in point- Coconut flour doesn't quite hold things together as well as regular white flour. It takes time for coconut flour to soak up juices.
When I placed the patties in the pan they just fell apart (even though I took all the usual precautions to keep this from happening).
Ugh, dinner was such a flop! Being the improviser I am, I just ran with it.
I went ahead and fried up the salmon mixture.
I quickly drained all of the juice off of the veggies, seasoned them, and added the fried salmon patty pieces to them. I folded it all together and placed it in the fridge overnight.
I was hoping the coconut flour would soak up the excess juice from the veggies.
This worked perfectly!
The next day, I grated some sweet cream butter into the mixture and fried my patties in olive oil.
They turned out golden brown and deliciously crispy. I added a homemade sauce and wallah, a healthy dish was served. 💕
My cooking skills were avenged and I saved my husband from salmon patty mush nightmares.
The best thing is, I got my husband to eat cruciferous vegetables and healthy salmon. Woohoo, points for me!
Real cooking is about following your heart, not a recipe.
Cruciferous Vegetables
1/2 cup chopped celery
3-4 bok choy stems chopped
1/2 cup finely chopped collard greens or chopped kale
5 chopped radishes sliced or diced
1 green bell pepper chopped
1 cup cauliflower florets
6 Brussel sprouts chopped
3 green onion stems chopped
2 carrots sliced or diced
Parsley & Basil (fresh is preferred)
1/2 Vegetable Broth
1 cup Chicken Broth
1/4 cup Teriyaki sauce
1/4 cup soy sauce
1/2 tsp ginger
2 cloves fresh garlic finely chopped
1/2 tsp turmeric
1/2 tsp curry
1/2 tsp grapeseed oil (makes it shimmer if you're using the recipe for soup!)
Place all ingredients in a large pot and cook until tender. Can be used as a soup recipe as well. Drain and set aside.
Salmon Mixture
1 can Double "Q" Pink salmon
Salt & Pepper to taste
Coconut Flour
2 eggs
Open the can of salmon and drain. Add eggs & salt/pepper. Add enough coconut flour to soak up the egg and make the mixture thick (as though you were going to make patties out of it). Heat olive oil in a frying pan and add the mixture without making patties out of it (not yet). Brown lightly (this is to make sure the egg is cooked). Cool. Add to vegetable mixture and place in the fridge overnight.
Salmon Patties
2 tbsp Sweet cream butter
3 tsp Olive oil
The next day remove the mixture from the fridge. Grate sweet cream butter into the mixture and blend well. Hand-make them into patties. Fry in olive oil until golden brown.
Remoulade Sauce
1 finely chopped green onion
1 tsp Red wine vinaigrette
2 tbsp mayonnaise
2 tbsp dijon mustard
Pinch of salt & pepper
Cajun seasoning
Mix all ingredients together. Add cajun seasoning to taste or until the mixture is pinkish.
Try these other sauces to change things up a bit.
